  1. Canola oil will kill you. It was a lubricant for ships' steam engines during WW2. When the war ended, they didn't know what to do to continue to make money so they bribed FDA into approving it for human consumption. It is one of the biggest food scams of the century. It causes type 2 diabetes, arthritis, high blood pressure, etc…

  2. My grandmother peels & slices the eggplant 1/4". Put the slices in a bowl of 1 tbsp salt to water with a lid in the fridge for 8 hours. She takes the bowl to the sink and rinses all the salt off. She then dries the slices with a paper towel. She dips each piece in egg and in half flour/meal and cooks them in a skillet of hot oil until golden brown on each side. They are not bitter and are very delicious.
I also like yellow squash fried like this too!

  3. I love this recipe <3 it's the BEST you can find anywhere.. After eating in Italian restaurant..Antipasto meal … 2015.. Ihave been looking everywhere .". Simple fried eggplant's"… Now I have found IT …… Thank YOU SO MUCH

  4. You have to salt the slices and put them in a colander and a bowl underneath with a weight on top of the slices. Live them there for about on hour until all the juices, that are bitter to taste, comes out of the slices. Rinse the salt off and pat them dry with a paper towel. Then, and only then, you are ready to cook the eggplant any way you like. I love them fried with an egg wash and bread crumbs. Use little oil in the skillet because the slices will absorb the frying oil. Once fried, put the in a paper towel to remove excess oil.

  5. THANK YOU FOR THIS, I HAVE NEVER DONE EGGPLANT AND HAD NO IDEA HOW TO PREPARE IT OTHER THAN GOING OUT AND ORDERING IT AS A SIDE DISH.  VERY WELL EXPLAINED, EVEN I CAN DO THIS.

  6. Can you use Italian bread crumbs and olive oil to fry?   Is olive oil not okay with this recipe?  Wouldn't the Italian bread crumbs solve all the comments that the recipe is too bland?
